Coffee Crumb Cupcakes

These cupcakes are leftovers of the Coffee Crumb cake that I made below. It is made of a butter cake in the bottom, topped with a generous layer of coffee crumb on top. It was so good! Sorry about the photos, I just had to take a picture before they're all gone! And gone they were! :) This cake is not very sweet, and has a big crunch when eaten. Definitely good with coffee too!

Hi Odette, i tried this one too but why are your cupcakes so full of crumbs? When mine started to bake they seemed to separate and scatter? Did you really put in a lot of crumbs on top, as in siksik? I'd be doing this again but will flavor the cake peppermint, so addicting!

Yeah I heard about that problem with coffee crumb cupcakes. I put a lot of crumbs on top so that it won't have any opportunity to separate. I filled the liners with about 3/4 full of batter (since UBC separates from liner if under filled) and I put crumbs on top until the end of the liner. Wow peppermint! I also wanted to try out other flavors for this, maybe almond :)
